Yogurt: Manufacturing and production equipment

Yogurt is a traditional and ancient method for storing, preserving, and prolonging the life of milk. Today, yogurt has become a much more sophisticated product, thanks to yogurt production equipment.

It is mixed with flavors, fruits, nuts, cereals, and other ingredients. Over the last 50 years, yogurt has become an extremely popular product in the consumer market. The varieties of yogurts are immense: low-fat, fat-free, organic, drinkable yogurt, frozen yogurt, baby yogurt, etc. The packaging of yogurt is a very important part of its sales strategy.

Yogurt Manufacturing Process

Whole milk, skim milk, or other types of milk are used depending on the yogurt we want to produce. Sometimes the milk undergoes a homogenization process. Stabilizing products are sometimes added to increase the texture of the milk.

For yogurt manufacturing, the milk must be standardized, which involves a process of reducing the fat content and increasing the solids in it. Then it is pasteurized to eliminate bacteria and homogenized to disperse the consistent fat molecules.

Once the milk has been pasteurized and homogenized, it is cooled, and the fermentation process begins. Fermentation increases the shelf life of products. The incubation process for achieving good fermentation lasts from 3 to 4 hours and can be done in large tanks, gallons, or even in each individual container. Lactic acid is a byproduct of this process.

Fruits, flavors, or other additives can be added to yogurts throughout the different phases of the manufacturing process.

Yogurt can be filled in thermoformed containers, glass, and bags.

  • CIP and SIP: Clean in place(CIP) and sterilization in place (SIP) systems that use chemical solutions and/or steam at high temperatures to effectively clean and disinfect production equipment, ensuring optimal sanitary conditions for yogurt manufacturing.
  • Filling and Sealing Machines: Automatic devices equipped with dosing and sealing systems that fill containers accurately and seal them hermetically.
  • Packaging Machines: Packaging systems that use advanced technologies, such as modified atmosphere packaging or vacuum packaging, to protect and preserve the freshness and quality of yogurt during storage and distribution.
  • Palletizers: Equipment designed to efficiently stack containers to optimize space and facilitate handling and transportation.
