COMPACT machine was born to summarize the 4 most important phases of cheese processing:

-cutting the raw material;
-stretching of the curd;
-heating the water necessary for stretching.
-final moulding of the product.

Technical features:
The most important part of the machine can be briefly described and divided into:
CURD-CUTTER
Is made in stainless steel mounted on the machine at a comfortable high to put in the curd blocks to work, inside is located a disk with blades made in stainless steel that will proceed to cut of the curd, that will fall to the augers compartment.
AUGERS COMPARTMENT
Made in stainless steel at double room, where the augers of pre-stretching and the advancement of the product are housed, to the final paste compartment. During the pass into the cooking compartment, the curd is to be hit by a jet of hot water coming out of faucets, allowing its soaking.
HOT WATER HEATER
The hot water necessary to stretching is produced through the hot water heater incorporated into the machine, made entirely in stainless steel with operation of steam. The temperature of hot water is easily adjustable with the thermo-regulator installed on the control panel.  The water supply to the mixing zone is done by electro pump installed on the machine.
DIPPING ARMS COMPARTMENT
Have a containment capacity of about 30 kg where stay the dipping arms through which you can give to the paste the desired consistency. In this section is even possible to correct the humidity degree, if it is necessary, through the immission on the paste, of the stretching water, with adjustable flow. The paste, arrived at the right stage of stretching, escapes from the machines, through a discharge outlet to arrive to the moulding compartment.
MOULDING COMPARTMENT
With double heated room, that forming a single body with the stretching section. ELECTRIC PANEL
Mounted on the structure of the compact machine, made in stainless steel watertight IP565, with low voltage controls.
SANITATION AND MATERIAL
The machine is manufactured by responding to the latest international sanitary regulations, both in materials and construction, so that every part is easily accessible to allow the user easy and quick cleaning.
The materials used in the construction are only in stainless steel AISI 304, with Teflon coverage for those parts that are in contact with the processing raw materials (cutting-cooking-stretching)..
