A heat exchanger is a device designed to heat or cool milk and other dairy or food products at controlled temperatures. This machine consists mainly of a cylinder with two layers of tubing containing the fluid between them. The fluid flow is directed to a top or bottom depending on the type of processing desired. Heat-Exchanger systems typically use chilled water and hot steam as the means of transferring heat to the appropriate fluid within the tubes. The temperature is controlled by electronic regulators, allowing precisely defined levels to be achieved for the required processing.
