The fruit and vegetable evaporators allow the reduction of the volume of these products by eliminating water with vacuum systems to obtain a concentrate of the same. Depending on the characteristics of the product to be concentrated, there are two types of evaporators: evaporators for products with a pulp content of less than 2%, and forced circulation evaporators for products with a large amount of pulp. Some of the most recognised brands of evaporators are: Manzinni and Rossi & Catell.
